4 gourmet coffee desserts to try

March 20th I had the great opportunity to be invited by a friend to a pastries class in the great

Chocolate academy

of Montréal

It was my first cooking class ever! And I absolutely LOVED the experience.

 

 


THE CHOCOLATE ACADEMY – MONTRÉAL 

The place and especially its name makes you think of Tim Burton’s movie, Charlie and the chocolate factory for the chocolate addict that we are but seriously, this place is amazing. In the lobby you found yourself surrounded with chocolate & other cooking books and there are some chocolate chunks for you to try. Very nice, isn’t it?

 

 

 

The demonstration took place in the auditorium, a very confy place to learn. I lasted about 4 hours but time flew by! You can see the cooking table right in front of you and a camera allows you to see from above on a screen, so that you can see what happend in the bowls and pans.

 

 

GOURMET COFFEE DESSERTS DEMONSTRATION

If you don’t know what it is, a gourmet coffee dessert is an smaller option to a entire dessert, with a coffe of course. It can also allow you to taste a few desserts in one plate, in small size.


Back at the demonstration, I found very interesting to watch the Chef, Nicolas Dutertre for this occasion, cook and observ his methods and hear his advices. Some of them will be very helpful for me in the kitchen.

 

I felt very inspired after this class for my company (

Biscuits etc

) but also for my personal dessert recipes at home. Therefore, I wanted to share with you the Chef’s tips to create great gourmet coffee.

Here are a few ideas on what to display on a gourmet coffee plate:


GOURMET COFFEE N° 1

The first plate is made of:

  • A chocolate quenelle
  • A mini chocolate bar
  • Churros with chocolate sauce

 

 


GOURMET COFFEE N° 2

 

  • A chocolate cake
  • A verrine with white chocolate pana cotta and strawberry jelly
  • Chocolate & hazelnut cookie

 

 

 


GOURMET COFFEE N° 3

  • A chocolate – coconut macaron
  • A chocolate cheesecake 
  • A chocolate cake

 



 

 


GOURMET COFFEE N° 4

  • A mini chocolate bar
  • A  chocolate-hazelnut cake
  • A crême brûlée
